Make it Yourself & Save --- Vanilla Extract

One of the best ways to save is to cook/make things yourself. Vanilla extract (the real thing, not the imitation) is quite pricey. Making it yourself can really save you a lot of money. Since some of you don't get the Tampa Tribune, when I saw this article in the paper today, I just had to share this recipe with you.

Homemade Vanilla Extract

1 L high proof alcohol (like vodka, rum, or bourbon)

12 vanilla beans

Split each bean down the middle lengthwise, with a clean, sharp knife. Pour out 2 oz of the alcohol and reserve for another use. Add the vanilla beans to the bottle of alcohol, cover tightly and shake. Place bottle in a cool, dark place and let sit for at least 8 weeks -- longer is better. Each week give the bottle a few shakes. When ready to use, decant into smaller bottles, as desired.

Rotisserie Chicken Salad


 This is one of the quickest, easiest meals you can make. Simply wash and slice your salad fixin's. Remove the rotisserie chicken meat from the bones, cut into bite size pieces and serve on top of salad.

But wait until you see what it cost . . .


Single Serving



This fed my family of 6!!! Even though there was not much by way of coupon savings for this meal, the sales still allowed for a savings of $6.56. (Actually, I did not purchase the dressing--I already had plenty in my stock pile and never pay more than $1 per bottle--often much less!).

Birds Eye Voila! With Grilled Chicken Breast

Not homemade, but great for those nights when you're so busy you'd rather eat out than cook--only MUCH cheaper!

Roast Beef, salad, and potatoes

This is the priciest meal suggested this week, but 100% home cooked and it's beef (versus the chicken in the last two recipes) and also includes asparagus -- two items that tend to be a little pricier than others. Still a great meal and a great deal feeding a family of 6 for under $22.

I cook my roast in a slow cooker all day seasoned with salt and pepper (you can add a pound of carrots in for another $1). Then, serve with mashed potatoes, steamed asparagus and salad.

A couple of notes on this one: Our Sweetbay accepts Publix coupons -- great deal on the salad mix. Only $0.99 for two bags!! Also, the tomatoes were a good deal at Publix this week, so I bought extra.
